Independence Day Celebrations

All-American Backyard Burger

Ingredients | Serves 10 to 12

  • 5 lbs. ground chuck (80% lean)
  • 3 cups finely chopped spinach
  • 1 cup chopped sweet onion
  • 3 tbsps. Worcestershire sauce
  • Kosher salt
  • Freshly ground black pepper
  • Vegetable oil
  • 12 cheese slices (American, Monterey Jack, or pepper jack)
  • 12 hamburger buns
  • Toppings: Applewood-smoked bacon slices, cooked and halved; tomato slices; green leaf lettuce leaves; white onion slices; dill or sweet & spicy sliced pickles; ketchup; yellow mustard; mayonnaise

Directions

  1. Preheat grill to medium-high. In a bowl, mix ground beef, spinach, onion, Worcestershire sauce, and 3 tsps. each of the salt & pepper.
  2. Divide meat equally into 12 portions; form patties about 1-in. thick. Season both sides lightly with salt & pepper.
  3. Lightly brush grill with vegetable oil; lace patties on grates. Grill 4 to 5 minutes on each side (for medium). Place cheese on top; cook an additional minute, or until melted. Toast the buns (if desired) cut sides down for 30 seconds to 1 minute.
  4. Serve burgers with desired toppings.

Red, white, and blue berry salad

Ingredients | Serves 10 to 12

  • 2 semi-tart red apples (Jazz or Sweet Tango), cored and diced
  • 1 tbsp. fresh lemon juice
  • 2 pints fresh blueberries
  • 2 pints fresh raspberries
  • 1 quart fresh strawberries, quartered
  • 1⁄4 cup chopped fresh mint
  • 2 tbsp. superfine sugar

Directions

  1. Combine apples and lemon juice in a bowl; toss to coat.
  2. Add the berries, mint, and sugar; gently stir to combine.

Sweet Tea

Ingredients | Approx. 1 gallon

  • Water
  • 2 cups sugar
  • 4 family-sized Lipton tea bags

Directions

  1. Fill a 2-quart saucepan three-fourths full with water; bring to rapid boil. Pour in just shy of 2 cups sugar; stir until completely dissolved.
  2. Add 4 family-sized Lipton tea bags (with paper squares torn off and strings twisted together so that they stay together); cover pan. Remove from heat; let steep for 20 minutes.
  3. Transfer tea to 1-gallon pitcher (remove bags). Press bags with back of spoon to extract remaining liquid, then discard.
  4. Add ice water to pitcher, leaving a 3- to 4-in. space at the top. Stir and pour over ice to enjoy!
  5. Adult alternative: Spiked Arnold Palmers. In large pitcher, combine 2 qts. sweet tea and 2 qts. frozen and reconstituted lemonade. Pour 8 ounces of the mixture over ice; stir in 1 to 2 ounces of bourbon or vodka; garnish with lemon wedge.
