Strawberries & Cream Cake

Main Ingredients

  • 4 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 1 ½ tablespoons granulated sugar
  • 2 tablespoons fat-free milk
  • 2 tablespoons heavy whipping cream
  • 1 large strawberry, chopped into small pieces



Additional Ingredients for Topping & Decoration, optional (serves 2)

  • ½ cup heavy whipping cream
  • 2 teaspoon granulated sugar
  • 1 strawberry, sliced
  • Confectioners’ sugar, for sprinkling



  1. Combine all main ingredients, except strawberry pieces, in an oversized microwave-safe mug. Mix with a small whisk until batter is smooth. Stir in strawberry chunks.
  2. Cook in microwave for about 1 minute. If cake is not done, heat an additional 15 seconds. Let cake cool a few minutes.
  3. For topping, place additional whipping cream and sugar in the mixing bowl of stand mixer (or use a handheld mixer); mix on high until peaks form. Top the cake with the whipped cream, a strawberry slice, and a sprinkling of confectioners’ sugar. Cake is best consumed while still warm or within a few hours of being cooked.
